Rainbow Salad
A balanced diet contains the full spectrum of colors. The way to create a delicious and nourishing salad with all the phytonutrients is to try to represent each color of the rainbow. Go for variety and try to add tastes and colors that have been missing from your diet.
INGREDIENTS
Some examples to choose from:
Red organic fruits and vegetables: pepper, tomato, rhubarb, berries, pomegranate seeds, red onion, pink grapefruit, beets, radishes
Orange/yellow organic fruits and vegetables: carrots, orange pepper, pumpkin, papaya, apricots, squash, pineapple, sweet corn, sweet potatoes, mangoes
Green organic fruits and vegetables: kale, romaine, spinach, cucumber, celery, sprouts, broccoli, roasted Brussels sprouts, zucchini, green onions, peas, and avocado
Black/purple organic fruits and vegetables: roasted eggplant, purple cabbage, figs, plums, blueberries, and blackberries
White organic fruits and vegetables: cauliflower, jicama, ginger root, mushrooms, garlic, and onions
Heart healthy oils: use to add in good fats (flax, walnut, olive or avocado) and season with fresh herbs (parsley, cilantro, basil, oregano)
METHOD
Assemble all ingredients into a glass bowl. Be creative! Season the salad with fresh herbs and homemade vinaigrette. Breathe. Enjoy the colorful and nourishing meal.
